Ben Tunnicliffe, Chef and Proprietor of the Tolcarne Inn, Newlyn Harbour has been shortlisted in the Best Pub Chef category of The Great British Pub Awards 2021.

 

The Tolcarne Inn’s chalkboard menu features simple honest food, with an array of fresh fish taking centre stage according to seasonal abundance. Ben and his Head Chef work closely with local fish merchants, as well as buying directly from day boats with Ben being licensed as a buyer of first sale fish ensuring the freshest fish is delivered each day. Complementing the catch of the day with fresh seasonal produce from small local growers, market gardens and community farms, his style allows the locally sourced, fresh ingredients to speak for themselves. With a sustainable approach to cooking, Ben also hopes to help safeguard Cornwall’s precious fisheries for generations to come.

 

Ben explained: “I have been a champion of Cornwall’s food scene since 2001, and I bring all those years of experience to bear at the Tolcarne. I wanted a venue where the food could speak for itself, without all the “pomp & ceremony” associated with great cooking otherwise known as fine dining, a phrase I really dislike. Showcasing the bounty of Cornish waters landed at Newlyn Fish Market, which is arguably one of the best and certainly most diverse fisheries in the UK.

 

“My cooking is instinctive, marrying land and sea with a light touch, that allows me to adapt dishes with ease to accommodate various dietary requirements. This is all achieved seamlessly, ensuring our customers are relaxed in the knowledge their needs will be taken care of. Good food in a relaxed surrounding is always enjoyable and the humble pub offers just that.”

 

The Great British Pub Awards recognise, reward and celebrate the fantastic work pubs do for our country and their communities. With entries spanning across ten categories, the shortlisted pubs will now go through a second round of judging to be crowned the overall winner.

 

Ben continued: “I am delighted that we have been shortlisted in this year’s Great British Pub Awards – this is a fantastic achievement in itself.  And I would like to pay tribute to my teams across our other sites for the hard work they do to ensure we continue to bring pleasure to our guests. It has been a challenging year for everyone and I would like to thank all our patrons for their continued support.”
